Hi Michael, we’ve learned over the years that the sichuan peppercorn can be prone to bitterness. I’m thinking that a more surefire way to avoid this is to simply add it after thickening the sauce. We will have to test it on our end.

Just made this for the first time and it’s SO good! I underestimated the saltiness of the bean sauce but experimenting with ingredient proportions is just another excuse to immediately make this again. (I only used used ⅔Tbs of the peppercorns and will definitely go up to a full Tbs and some extra chilies next time- very excited 😈)

Wow! Incredible flavors – and the heat is definitely numbing! The only change I made during the recipe was swapping ground beef for the pork. After it was done, I found it to be a bit bitter ( I don’t think I burned the chili oil, but it’s possible) so I used a bit more sugar (about 1 TBS total). Mine also didn’t have a nice orange color (must be the brand of bean sauce?) so I tossed in a bit of dark soy sauce and that helped. The whole family loved it so it’s definitely a keeper.
